Sweet Potato Brownie Recipe
It was a "challenge accepted" moment for me when I noticed some of my kids pushing back against our quest for organic/clean eating in our household. I had scrolled past this recipe time and time again on social media thinking "there is no way in h@!! these kids are going to fall for that." Not only did they fall for it, they loved it. AND they weren't surprised or mad when I told them the secret ingredient... SWEET POTATO!

- 2 small Organic Sweet Potatoes, peeled and cooked (boiled)
- 1/2 cup Organic Almond Flour we make our own, check out the link above
- 1/2 cup Organic Unsweetened Cocoa Powder
- 1/2 cup 100% Pure Organic Maple Syrup
- 1/4 cup Organic Coconut Oil melted
- 1 tsp Organic Vanilla Extract
- 1 tsp Baking Powder
- 1/4 tsp Salt we use Himalayan Pink and it's about 8-10 grinder twists
Peel and cut 2 sweet potatoes into small chunks.
Boil sweet potatoes until they fall off a fork when pierced.
Preheat oven to 350℉. Grease 9x9 baking sheet (we use Wesley Farms - which is BJ's Wholesale Club- Organic Olive Oil Spray for everything under the sun).
Toss your sweet potato chunks into the blender or food processor for a few seconds until smooth.
Add almond flour, cocoa powder, coconut oil, maple syrup, vanilla, baking powder, and salt to a bowl with your mashed sweet potatoes. Stir well until totally combined.
Pour mixture into baking pan and bake for 28-30 minutes, or until a toothpick or knife comes out clean.
